Organic grass fed shoulder on the bone is an outstanding cut when cooked slowly at a low temperature, the natural connective tissue and fats baste the meat from the inside leading to a delicious rich flavour and lots of wonderful gravy. This cut also lends itself to being cooked in strong flavours such as wine, garlic and rosemary. The small 500g portions are ‘Lamb Henry’s’ which when cooked slowly in mint sauce (and Cumberland sauce) create the Lakeland classic ‘minted lamb henry’.

Although this cut is higher in fat, the fats from the animals 100% grass diet mean that they are healthier than those from animals that have been grain fed.

    I’ve had a culinary pleasure to experience the taste of the lamb shoulder on the bone, simply slowly cooked at first with just a touch of salt, garlic and caraway seeds, and then roasted till meat was falling off the bone and the skin was crunchy. Licked my fingers (and hands and arms up to my elbows) after eating this! Meat was to die for, tender, flavoursome and with just the right amount of tasty fat – excellent for us, crazy folk on keto lifestyle. Can’t wait to empty my freezer a bit so I can stock up on this yumminess yet again. Well done, Primal Meats – whoever your supplier is, please keep them (and their lambs).
