This cull cow share is a rare offering from – organic and PFL certified – Boyd Farms.

The cow is a 10 year old pedigree Hereford. Meat from cull cows is much sought after due to its enhanced flavour, depth, texture and nutrient density as well as rare availability. Grass fed cows develop deep yellow fat with age, which melts into the meat when cooked, to yield a silky, melt in the mouth texture and incredible flavour. To get the most from mature beef, as with mutton and meat from mature animals, the joints need to be cooked low and slow. Ideally simmered in the slow cooker for around 8hours.

When properly cooked, these meats are incomparably more delicious than meat from younger animals. Sirloin and Fillet steaks can still be cooked quickly and served rare if desired – though you should expect them to be slightly firmer than steaks from younger animals, due to the higher muscle fibre density in older animals.

About the farm:

Boyd Farms has an Organic Pedigree Hereford suckler herd which are used specifically to manage 100 ha of Species-Rich Calcareous Grassland, created as part of a Higher Level Stewardship Scheme. The cows, calves, yearlings and two-year olds are kept as a big family group and out-wintered on the thin Cotswold Brash soils, supplemented only by late-cut hay from wild flower meadows.

The farm has won multiple awards including Grassland Manager of the Year 2023, with others awarded by the Farming & Wildlife Advisory Group, Royal Society for the Protection of Birds and Glos Wildlife Trust and is a demonstration farm for Natural England.

Additional information:

The beef is VACUUM-PACKED, as the air has been removed from the packaging, the meat will stay fresh for up to 10 days in your refrigerator providing it is kept between 0-3 degrees C. The fresh mince needs freezing after 5 days as it has been through a machine. All meat intended for freezing should be frozen as soon as possible after purchase. The quality of the meat is the same whether it is cooked from fresh or frozen. Once unfrozen, meat must not be refrozen.

The cuts (please note this can vary):

  • 1.2kg roast (Topside, Silverside or Top Rump)
  • 1kg slow roast (Brisket, Chuck or Short Ribs)
  • 2 x 500g packs casserole beef (stew or shin)
  • 2 packs of steaks.  Each pack has 2 x 250g steaks (generally Sirloin and Rump but some with Rib eye and Bavette)
  • 3 x 500g packs of minced beef

You can purchase additional fillet steak with your order for £23 per pack (approx.350g)
