This is a meaty paleo pork sausage with juniper berries and garlic and is totally nitrate free. We use pork belly and natural skins to help maintain the flavour and traditional ‘bite’. These sausages are still hand linked in the traditional fashion. Juniper is a distinctive pungent herb that goes beautifully with garlic and pork – this is a very posh sausage!
